Lose It - Test Your Fitness!

Tuesday has snuck up on me! Mrs. McGillicutty is taking a little vacation so I'm going this post alone. And, because I have friends coming to pick me up at 6:30 and it is now 5:55 I have to post something quick. It's not that you all aren't worth it though, you are. =)

I have found us a couple of fun little "health" quizzes to do and then I've shared with you one of my favorite new recipes.

I'm not sure that I would call myself "fit" at all. I'm definitely healthy, but I'm sure it's not the "healthy" they are talking about! Ha!

I think this result was fairly accurate. I'm not a huge dieter. When I want to lose weight I normally just watch what I'm eating and limit my calories. I cut out all the junk-food!!


I love Tabbouleh/Tabouli. Have you eaten it or heard of it? It's a Middle-Eastern salad normally made with bulger. That is the way I've always eaten it, but recently someone posted on Facebook about a Quinoa (kin-na) Tabbouleh. Quinoa is much healthier having more protein, amino acids, fiber, magnesium and iron. It is also gluten-free and easily digested.

QUINOA TABBOULEH (4 - ½ CUP SERVINGS)



•1 cup quinoa - rinsed
•2 cup water
•¾ - 1 cup parsley leaves, packed - washed, finely chopped
•1 pint cherry tomatoes, halved. (I made mine with beautiful Heirloom tomatoes.)
•3 green onions - thinly sliced
•1/4 c. tablespoons lemon juice
•1 tablespoon extra-virgin olive oil
•1 tablespoon white balsamic
•2 garlic cloves - minced
•pinch of salt
1 cucumber - diced


In small sauce pan combine quinoa and water, and bring to a boil over medium heat. Once boiling reduce heat to low, cover and cook for 15 minutes, or until liquid is absorbed. Allow quinoa to cool down to room temperature. In a small mixing bowl combine cooked quinoa, parsley, tomato, onions,cucumbers, lemon juice, extra-virgin olive oil, balsamic, garlic, and salt. Once combined refrigerate in an air tight container for at least 30 minutes to combine flavors.

Mrs. Albright - I met my goal last week and lost 2 pounds. Woot! My goal this week is to go to Pilates two times and do some type of cardio at the gym on another day.
