Strawberry Dreams Anyone? Okay, maybe just Recipes.

I ♥ Strawberries! I love them in a salad. I love them in pie. I love them plain, with salt, sugar, as a topping and even in a cake! If I can find a strawberry recipe, you can bet your strawberry shortcake that I am going to make it and eat it!

Today the RHOK Stars are sharing with you a few of our favorite strawberry recipes and then we are going to ask that you share a few of yours by linking up at the end of this post!


Strawberry DeLight 
from the kitchen of Mrs. Hart
1 premade Angel Food Cake 
1 large pkg Strawberry Sugar Free Jello 
1 container of Sugar Free Cool Whip 
1 pint of Strawberries 

Crumble Cake in 9x12 pan. Mix Jello as directed. Pour Jello over cake. Place in the refrigerator until it sets up. Then top w/ cool whip and strawberries. Yummy! If you cut it into 12 pieces, it is 2pts on Weight Watchers. Today I placed 24 strawberries on it and made it 1pt/piece. 



Strawberry Spinach Salad with Poppy Seed Dressing

Strawberries
Spinach
Grilled Chicken Breast if desired
Walnuts if desired
Dressing:
3/4 C Sugar ( I used Splenda)
1 t dried mustard
1 t salt
1/3 C Vinegar (I like balsamic)
1 T onion juice (if anyone knows really what this is use it, I added some garlic powder)
1 C Salad Oil (use 1/4 oil, 1/4 white vinegar, 1/2 water to make lighter, that's what I do)
1 1/2 T Poppy Seeds




Strawberry Pie

3/4 C sugar 
scant C water
3 T Corn Starch
2 T Karo syrup
2 T strawberry Jello
red food coloring
Halved strawberries, fill the pie plate!


Pie Crust:
1 1/2 C flour
1/2 t salt
1/2 C oil
2 T milk
2 T sugar
For crust: mix ingredients. Pat in pie plate and bake at 400* for 15 minutes until light brown.
For filling: Cook until thick. add Jello and some red food coloring (enough for color). Pour over strawberries in pie shell. Refrigerate. Top with favorite whipped topping.


Strawberry Pie

Heat 1 3/4 cups water and 1 small (cook and serve) vanilla pudding mix to boil, stirring constantly.
Remove from heat and stir in 1 small box of strawberry jello.
Let cool.

Slice 1 pint of fresh strawberries and put in shortbread pie crust (ready made).
Pour jello/pudding mix over strawberries and refrigerate until solid
.



*Irony: the only fruit pie I will touch and dearly love but can no longer eat due to severe strawberry allergy. Cant even touch them.  :(




Strawberry Pie

Cook the following until clear & gel like:
1C water
1C sugar
3TBLSP cornstarch

Then add: 1 sm package of strawberry jello and 1 1/2 C sliced strawberries
Pour into a baked pie shell or graham pie shell that has been spread with 8oz of very soft whipped cream cheese mixed with 1/4 cup sugar.
Place in fridge to chill & set up for 1-2 hours.
To top with fresh whip topping is optional after it has set up.

  
*Mrs. Sinclair likes it best in the Graham shell with no whip topping. :)

Strawberry Pizza

Crust: 1 cup flour
1/4 cup powdered sugar
1/2 cup butter

Filling:
1 (8 oz.) cream cheese, room temperature
1/2 tsp. vanilla extract
1/2 cup granulated sugar
1/4 tsp. freshly squeezed lemon juice

Topping;
1 cup fresh strawberries, mashed
4 Tbsp. granulated sugar
1 Tbsp. cornstarch
8 – 10 strawberries sliced.

Crust:
 In a medium bowl, combine flour, sugar and butter. Form into a ball with hands and press into a 14 inch ungreased pizza pan (I used my Pampered Chef pizza stone)
Bake at 325 degrees for 15 minutes. Cool.

Filling:In a medium bowl, combine cream cheese, vanilla, sugar and lemon juice. Spread on cooled crust.

Topping:
In a saucepan over medium heat, combine strawberries, sugar and cornstarch. Simmer until thick and glossy. Cool. Spread on top of cream cheese filling.
Cut fresh strawberries crosswise to make rounds that resemble pepperoni, place on pizza and serve.


Pink Elizabeth Cocktail
from the kitchen of Mrs. Albright
2 parts ginger ale
1 part  pink lemonade
1 oz. Vodka
3 strawberries
Mix Ginger Ale and Pink Lemonade.  Add 1 oz vodka to glass.  Drop in a few strawberries and let sit a few moments.  Last, fill glass with juice mixture.
