It's surreal to be writing about the end of summer you know. Labor day just kind of has a finality to it. I love summer & all the things that go with it. I mean, sure I was not a fan of our temps straight from the face of Hell this year, but I'm talking more the pace of things, the mindset. Even though we've been back in school for weeks, really that mindset of leisure is what I'm going to miss. When you get to Labor Day, it's fitting really: my mind goes straight to business & work. Yuck.
But today was lovely! Our first cold front in months swooped in last night giving us our first chilly temps. We swam anyway, having thought beforehand to place the solar cover on to heat the water, thus experiencing the odd phenom of being warmer in the water than out. Weird, huh?
Mr. Sinclair himself, had cool enough temps to smoke all the meat for our family gathering (yum!) and thankfully my stomach was on good behavior & I was even able to eat! For dessert we had the speacial chocolate pie of Minnie's from the Help movie (which I've seen 2x and love!). Below I'm sharing the recipe for it for y'all to enjoy (made the nice way of course!). 1 1/4 cups sugar
3 1/2 tablespoons cocoa
1/4 cup butter, melted
1 teaspoon vanilla
5 ounces milk (evaporated)
1 pie crust, uncooked
Preheat oven to 325°F.
Mix everything together in one big bowl.
Don’t bake the crust first, just prick holes in the bottom of it with fork.
Pour filling into crust.
Bake for about 50 minutes. Let the pie set for a long while once it comes out of the oven. I think this definitely tastes better room temperature.
Serve with a big scoop of whip cream, or chilled!
