As most of you know, I belong to a cooking club in my little town. We love getting together to eat and share our recipes. January's theme was Super Bowl, so pretty much any appetizer worked.
I came across this recipe on Baked Bree (love her site). It's a recipe for Roqucamole. Have you ever even heard of it? I hadn't, but the ingredients sounded wonderful to me so I made it. It was a big hit!
It would also be a perfect appetizer for any St. Patrick's Day party you might be attending, with it being green and all. You're welcome, in advance.

The theme for February is Heart Healthy. It had to have something to do with the heart because of Valentine's Day, of course.
